Sweet Corn and Basil Salad

Corn is finally in season over here, and I just can’t get enough! Near our new place, there’s this little health food store that takes orders on Facebook, and I just think this is the best system ever. They let you know when produce, like corn, will be in and you can let them know what quantity you’ll buy. It’s just perfect: you get to enjoy the freshest produce, and they don’t order too much. Anyways, all that to say that today I got to pick up my 12 corn ears! They are so delicious, I actually hate one raw: super fresh and extra sweet! While I was at the shop, I also grabbed a bag of arugula and basil. Perfect for a summery salad!

Here is what you need:

  • 4-6 fresh corn ears
  • 4 cups of arugula
  • 1 cup fresh basil
  • 4 tomatoes or 2 cups cherry tomatoes
  • 2 tbs sesame oil
  • 1 tbs balsamic vinegar
  • 1 tsp soy sauce
  • salt, hot sauce and pepper to taste

Here is what you do:

  1. Peel your corn ears and lightly brush them with some of the sesame oil. Place on a lined cooking sheet and sprinkle them with some salt. Place in your oven set to broil for 10 minutes, turn them over and let them sit for another 10 minutes. Remove from the oven and let cool. If your barbeque is out, you should grill your corn!
  2. Roughly chop the tomatoes and the basil. On your lined cookie sheet, place the tomatoes and half of the basil. Add a few pinches of salt and pepper and place in your oven set on broil for 10 minutes. Remove from the oven and set aside.
  3. In your salad bowl, mix the remaining sesame oil, vinegar, and soy sauce. Add hot sauce or salt and pepper to your taste. Toss in the arugula, the rest of the basil and the tomatoes.
  4. Cut the corn from the cobs and add to the salad. Give a quick stir and enjoy!

This is such a nice side dish to any barbeque you might be attending, or to accompany veggie burgers or anything really. It’s sweet, fresh and full of summer. Let me know if you try this out!


Pour cette jolie salade de fin d’été (et oui, déjà!), vous aurez besoin de:

  • 4-6 épis de maïs
  • 4 tasses de roquette
  • 1 tasse de basilic frais
  • 4 tomates ou 2 tasses de tomates cerises
  • 2 c. à table d’huile de sésame
  • 1 c. à table de vinaigre balsamique
  • 1 c. à café de sauce soja
  • sel, poivre et sauce piquante selon votre goût
  1. Enlever les peaux des épis de maïs et les placer sur une plaque allant au four recouverte de papier d’aluminium ou de papier sulfurisé. Huiler légèrement les épis avec un peu d’huile de sésame et saupoudrer quelques pincées de sel. Place au four sur le mode ‘grill’ pour 10 minutes, retourner les épis et laisser cuire encore 10 minutes. Sortir du four et laisser refroidir. Si vous avez un barbeque, c’est l’occasion parfaite de s’en servir! Lorsque les épis sont manipulables, couper les grains de maïs et réserver.
  2. Couper les tomates en morceaux et hacher le basilic. Placer les tomates sur votre plaque et ajouter la moitié du basilic. Ajouter un peu de sel et de poivre, bien mélanger et enfourner pour 10 minutes encore sur ‘grill’. Retirer du four et réserver.
  3. Dans un grand saladier, mélanger le reste d’huile, le vinaidre et la sauce soja. Vous pouvez ajouter du sel, de la sauce piquante ou du poivre selon votre goût. Ajouter la roquette, le reste de basilic, le maïs et les tomates. Bien mélanger et déguster!

Protein-Packed Chocolate Fudge & Giveaway!

A few weeks ago, I contacted Manitoba Harvest to know if they would be interested in organizing a giveaway with me, and they were! I have to say I have been a fan of their hemp hearts for a while. These little seeds are packed with protein and have a very mild flavour. This means you can pretty much add them to everything! Mix them up with some nuts and you have a wonderful pie crust, add them to your smoothies for an extra kick, or sprinkle them on salads and soups. I also add them to my overnight oats to add protein. Yum!

I really love this particular brand of hemps seeds because they are Canadian, always super fresh and particularly tender. This makes the seeds very easy to add to any dish that I might be making.

Today, I wanted to create something that was really hemp seed central. If you like fudge, this is the recipe for you! It’s super creamy, rich and chocolaty, without the guilt. It also takes 5 minutes to prepare. What else is there to ask for? Receiving a free bag of hemp hearts perhaps? I got you covered. Read on to find out how you can win one!

Here is what you need:

  • 1/2 cup hemp hearts
  • 1/4 cup icing sugar (I used coconut sugar that I processed)
  • 1/4 cup raw cocoa powder
  • 2 tbs coconut oil

Here is what you do:

  1. In your food processor, process the hemp seeds with the sugar and coconut oil until you have a thick butter consistency. Scrape down the sides often to make sure everything is smooth. This should take about 2 minutes.
  2. Add in the cocoa powder and process until completely incorporated. The consistency should be thick.
  3. With clean hands, roll 1 tsp of the dough at a time to form fudge balls. You can also spread the dough in a pan and make fudge squares if you prefer. Keep in the fridge in an air-tight container, and try not to eat them all at once! Enjoy!

This is seriously easy while being seriously delicious! And nutritious too! Hemp hearts are packed with protein, healthy omegas and a good source of many essential minerals. Seriously, these little things are incredible! You should check them out and add them your pantry essentials.

Crispy Rice Treats- yes, they’re vegan!

Yesterday, I found some vegan marshmallows at the Ottawa Veg Fest. I was really excited to try them out to make crispy rice treats, a childhood favourite. There is something completely comforting about this desert.

I basically followed the classic recipe, but the really interesting thing is that the vegan marshmallows are perfect! Directly out of the bag, they have the same airy and bouncy texture as the original deal. Their taste is also the same, except they are maybe a little bit less sweet, which for me is a plus as regular marshmallows make me sick pretty quickly. These marshmallows really have nothing to envy to the traditional marshmallows. I really don’t see why we don’t all switch to vegan marshmallows: they are just delicious!

As for the crispy rice treats themselves, they were just as I remembered: noisily crispy and oh-so-chewy! I seriously can’t believe how great these marshmallows are! They really are a great addition to any vegan pantry. I can’t wait to experiment with them again! And in case you never made crispy rice squares (or doughnuts) here’s the recipe:

Here is what you need:

  • 1/4 cup coconut oil
  • 1 bag vegan marshmallows (280g)
  • 1 tsp vanilla extract
  • 5 or 6 cups of puffed rice cereal

Here is what you do:

  1. Melt the coconut oil with the marshmallows and vanilla in a sauce pan on medium heat. Stir until combined.
  2. Turn off the heat, and pour in your cereals and mix until evenly coated.
  3. Spread the mixture in a greased pan. Let sit until firm. Cut and enjoy! I used my doughnut pan to make them round, but you can use any pan you have: just make sure it is well greased, because this treat is sticky!

 

Raw Vegan Chocolate Cake with Frosting

This is the dessert you need to try out if you are looking for the ultimate chocolate cake. It is full of flavour, rich and satisfying. It is also very quick and easy to make, so it would be a perfect last minute treat for busy days.

Here is what you need for the cake:

  • 1 cup pecans
  • 1 cup walnuts
  • 8 medjool dates
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract

Here is what you do for the cake:

  1. Add the nuts into your food processor or blender and mix until finely ground.
  2. Add the pitted dates, cocoa powder and vanilla extract. Process until evenly combined and sticky.
  3. Press a few tablespoon of the cake mixture in a small jar and pat down. Place in the fridge.

Here is what you need for the frosting:

  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • dash of salt

Mix all the ingredients until smooth. Spread on the cake and let sit in the fridge until the frosting thickens up.

This is a really intense chocolate cake! The flavour is rich, and the texture is smooth and creamy. The frosting makes this extra special and adds some sweetness. I really like how easy this dessert is, while still being impressively delicious! Be prepared for a great chocolate overload! Let me know if you try this out!

 

Veggie Love: Purple Sweet Potato

These purple sweet potatoes are amazing! I am completely in love with them and have been eating them everyday since last week, and I can’t get enough of them!

I like boiling them with their skin until they are just tender. After that, I keep them in a sealed container in the fridge and use them as part of almost every meal. They are so tender, sweet and look at that color! It is so much fun!

They also make really good snacks: because the skin is still on, they don’t crumble and are easy to eat. These little purple treasures are amazingly smooth and keep me filled up for a long time. Easily found in Asian grocery stores, they are a little bit more expensive than regular potatoes, but it is so worth it for the flavour, texture and colour of this potato is exceptional. A quick search around the internet will also let you know that these have amazing nutritional properties. But really, look at this colour!
